Pineapple Pie

We have never seen pineapple in a pie before. Inspired by our strawberry and peach pies, Sandrine thought she'd give it a shot. We have discovered something amazing!

It's not everyday a new recipe comes out just as you had envisioned.

​Ingredients:
1 pie shell (homemade or store-bought) pre-baked
1/2 water
1/4 cup cornstarch ​
1 pineapple, cored, diced and mashed
1/2 cup sugar
​Pinch of salt
​Directions:
1. In a small bowl whisk together water and cornstarch to form a slurry.
2. Pour slurry into a saucepan and add the pineapple, sugar and salt.
3. Heat mixture over medium heat, stirring often.
4. Bring mixture to a boil and continuously stir for about a minute or two more. The mixture should be thick and sputtering. 
5. Pour the filling into your prepared pie shell and allow to cool to room temperature.
6. Chill pie in the fridge for a couple hours.
​​Serve with whipped cream and celebrate the little victories!
