Banana Bread

It's time for back to school banana bread! Who's ready for a new school year? Not a student any longer? Go ahead and make it anyway! Banana bread for any occasion!

We aimed for a relatively healthy recipe. Despite its healthiness, this banana bread is scrumptious! Enjoy!

Ingredients:
2 cups flour (we did 50/50 all purpose and whole wheat, you can also do 100% of either)
1 teaspoon baking soda
1/4 teaspoon salt
3 mashed, very ripe bananas
2 eggs, beaten
1/2 cup applesauce
1/2 cup sugar
2 teaspoons of vanilla extract

Optional add-ins: 
1/2 cup chocolate chips
2 tablespoons chia seeds
1/2 cup shredded coconut
1/2 cup chopped pecans or walnuts
+ garnish with a sprinkle of oats
Directions:
1. Preheat oven to 350 degree F. In a large bowl, whisk together flour, baking soda and salt.
2. In a separate bowl, mash bananas. Whisk in eggs, applesauce, sugar and vanilla.
3. Add wet ingredients into the dry. Mix with a spoon until just combined (seriously, do not over mix).
4. Fold in add-ins, if using. We made ours with chocolate chips and chia seeds. 
5. Pour batter into a lightly greased 9x5 loaf pan. Bake for 60-65 minutes, until toothpick inserted comes out clean.

Let cool completely before slicing. Enjoy!
